The Ultimate Veggie Dip

Do you love beets? I know, I know, they are delicious. Especially, roasted beets! Which is why I roasted up some beets to create this deliciously creamy vibrant veggie dip. I hope you enjoy!

The Ultimate Veggie Dip



  1. Soak cashews in enough water to fully submerge them for about 2 hours, drain and rinse.

  2. Meanwhile, roast your beets by preheating the oven to 400 F. Wash the beets and trim ends as needed. Wrap each beet in foil and place in the oven for about 60 minutes.

  3. Peel the beets once slightly cooled and chop roughly.

  4. Place your soaked/drained cashews in a food processor and blend until smooth.

  5. Add the beets, lemon juice, olive oil, tahini, salt, garlic, and black pepper, pulsing a few times to combine.

  6. Process until you get a smooth consistency. Serve with your favourite veggies!
