Thai Pumpkin Seed Stir-Fry with Cauliflower Rice

I love stir-fry! The more vegetables, the better! This is one of my favourite stir-fry recipes to make. I hope you enjoy it as much as me.


Thai Pumpkin Seed Stir Fry with Cauliflower Rice

Cooking time: 45 minutes

Serves: 4


Thai Pumpkin Seed Sauce

Ingredients:

  • ¾ cup Pumpkin Seed Butter

  • ¼ cup coconut milk

  • ½ cup water

  • 1 tbsp lime juice

  • 2 tbsp coconut aminos

  • 1 tbsp fish sauce

  • 1 tbsp hot sauce

  • ½ tbsp. ginger root, grated

  • 2 garlic cloves, minced

  • 2 tbsp cilantro, chopped

Directions:

  1. Combine all ingredients in a small saucepan. Simmer on medium-low heat for 5-7 minutes.

Stir-fry

Ingredients:

  • 4 chicken breasts

  • 1 onion, chopped

  • 2 carrots, sliced

  • 2 celery sticks, sliced

  • 1 ½ cup broccoli, sliced

  • 1 zucchini, sliced

  • 1 bell pepper, sliced into strips

  • 1 cup mushrooms, sliced

  • 1 tbsp coconut oil

  • 2 tbsp cilantro, chopped (for garnish)

  • 1 lime, wedged

Directions:

  1. Chop vegetables.

  2. Slice chicken breast into thin strips.

  3. Heat coconut oil over medium heat.

  4. Add chicken and onions. Sauté until fully cooked (no pink).

  5. Add vegetables. Sauté until vegetables are tender (they should brighten in color).

  6. Stir in Thai Pumpkin Seed Sauce. Simmer for 1 minute.

  7. Serve over cauliflower rice. Top with cilantro and lime juice. Enjoy!

Note: You can add any vegetables you enjoy!

Cauliflower Rice

Ingredients:

  • 1 head cauliflower

  • 1 tbsp coconut oil

  • Salt & pepper

Directions:

  1. Grate cauliflower with a cheese grater.

  2. Melt coconut oil in frying pan over medium heat.

  3. Add grated cauliflower and sauté for 3-5 minutes. Season with salt and pepper.
