Paleo Taco Salad

Updated: Feb 12

It finally feels like Spring in Calgary, and it has me dreaming of delicious salads and endless combinations! Our bodies naturally want to eat a little lighter when it's warm out and with all the fresh produce its hard to pass up a well-made salad. Amirite?!

I LOVE a good taco salad, especially one that focuses on whole natural foods and tons of nutrient-dense vegetables... enter my Paleo Taco Salad! You're Welcome...

Paleo Taco Salad

Serves 4

  • 1 lbs Extra Lean Ground Beef

  • 1 tsp Smoked Paprika

  • 1 tsp Garlic Powder

  • 1 tsp Cumin

  • 1 tsp Chili Powder

  • 1 tsp Ground Black Pepper

  • 3 heads of Romaine Lettuce (chopped)

  • 1 Green Bell Pepper (diced)

  • 1 Yellow Bell Pepper (diced)

  • 3 Tomatoes (diced)

  • 1/2 Red Onion (diced)

  • 2 tbsp Fresh Cilantro (chopped)

  • 2 Avocado (diced)

  • 2 limes (juiced)

  • Hot sauce to taste

1. Brown ground beef in a frying pan. Add all spices and a 1/4 cup of water to make sure spices are evenly distributed on the meat. Simmer until water is evaporated.

2. Arrange all vegetables (except avocado) in a bowl, top with ground beef and avocado.

3. Squeeze lime juice and hot sauce over salad and then toss salad.

4. Serve and enjoy!

Note: For meal prep, I leave meat separate to warm up before adding to the salad.
