Paleo Stuffed Bell Peppers

I'm a huge fan of meal prepping any time of year. But especially during summer so that I can spend as much time as possible enjoying the sunshine and less in the kitchen! Ya feel me?

Which is why I love making these Paleo Stuffed Bell Peppers. They are the perfect item to make for your meal prep or a family dinner! I like to pair mine with some mixed greens with olive oil and balsamic vinegar.

Paleo Stuffed Bell Peppers

Serves 6


  • 6 Bell Peppers (tops and seeds removed – reserve tops)

  • 2 lbs Grass-Fed Ground Beef

  • 1 Yellow Onion (chopped)

  • 1 3/4 lbs Fire Roasted Tomatoes (liquid drained)

  • 2 cups Tomato Sauce (about 14 oz)

  • 3 Garlic (pressed or finely minced)

  • 3 tbsp Italian Seasoning

  • Red Pepper Flakes (to taste)

  • Sea Salt And Pepper (to taste)

  • Cilantro (Chopped for garnish)


  1. Preheat oven to 350º F.

  2. Cut tops off peppers and remove seeds. Keep tops and chop them (minus the stem) and set the pieces aside.

  3. Chop onion and mince garlic cloves.

  4. In a saucepan over medium heat, sauté onion, garlic, and chopped pepper tops in a little olive oil for about 5 minutes until onions are tender.

  5. In the same saucepan, add ground beef and cook everything together until the meat is browned.

  6. Add the fire-roasted tomatoes and tomato sauce to the same saucepan, and stir.

  7. Then in a baking dish set the pepper shells inside and spoon stuffing mixture into peppers.

  8. Bake about 30-40 minutes at 350º F uncovered to heat thoroughly.

  9. Remove from dish, serve hot, and enjoy!
