Lemon Poppy Seed Muffins

I don't like to play favourites but for as long as I can remember... Lemon Poppy Seed Muffins have been my favourite muffins. I know you'll enjoy these gluten-free nut-free egg-free muffins as much as me!

Lemon Poppy Seed Muffins

Serves 12


  • 1/2 cup Ground Flax Seeds

  • 1 1/2 cups Warm Water

  • 2/3 cup Coconut Flour

  • 1/2 cup Maple Syrup

  • 1/2 cup Melted Coconut Oil

  • 1/3 tsp Sea Salt

  • 1 1/3 Lemon (zested and juiced)

  • 1 1/3 tbsp Poppy Seeds


  1. Preheat your oven to 350ºF.

  2. Combine ground flax and warm water together and let it sit for a few minutes.

  3. Combine coconut flour, maple syrup, flax mixture, coconut oil and salt in a mixing bowl. Stirring well to combine.

  4. Add in lemon zest, lemon juice and poppy seeds to the mixture and mix well.

  5. Ladle the batter into parchment-lined muffin tin.

  6. Place in the oven and bake for 35 minutes.

  7. Remove from the oven and let cool.

  8. Enjoy!
