Kale Salad with Lemon Poppy Seed Dressing

It's summer and all I want is a delicious salad! Shredding some nutrient-dense kale is a great place to start. Making your own dressing isn't hard and you know exactly what's in it! Salad dressings that you find on grocery store shelves are filled with added preservatives, salt, sugar and hidden ingredients. This Lemon Poppy Seed dressing is one of my favourites and only takes a couple of minutes to make.

Kale Salad with Lemon Poppy Seed Dressing


  • 1 bunch of kale

  • 1 apple, peeled, cored, diced

  • 1 pear, peeled, cored, sliced

  • 3 tbsp dried cranberries

  • 1 cup cashews

  • 2 tbsp sunflower seeds or pumpkin seeds

  • 1 tbsp hemp seeds

for dressing:

  • 1/4 cup raw honey

  • 2 lemons, juiced (about 1/2 cup)

  • 2 tsp red onion, diced

  • 1 tsp Dijon mustard

  • 1/4 tsp salt

  • 2/3 cup extra virgin olive oil

  • 1 tbsp poppy seeds


  1. In a blender or food processor, combine honey, lemon juice, onion, mustard and salt. Process until well blended. With the machine still running, add in the oil slowly, a steady stream until the mixture is thick and smooth. Add poppy seeds and process a couple more seconds.

  2. De-stem kale and shred into thin slices. Place kale in a large serving bowl and massage with coconut oil. Toss together kale, cashews, seeds, dried cranberries, apple and pear. Pour dressing over the salad just before serving and toss to coat.
