Gluten-Free Shortbread Cookies

Okay! I don't care what you say... Shortbread is hands-down the best Christmas Cookie! And I think that you'll agree after trying these... because they melt in your mouth like butter.
1/2 cup butter
3 tbsp Stevia
2 tsp Vanilla Extract
3/4 cup Almond Flour
1/2 cup Tapioca Flour
Pinch of Salt
Preheat oven to 350.
Whip butter, vanilla and stevia with a mixer on high speed for about 3 minutes.
Add flours and salt. Best again for another 3 minutes.
Scoop batter onto a parchment-lined cookie sheet.
Bake until edges are golden brown, about 11 to 13 minutes.
Let cool on pan.
