Gluten-Free Shortbread Cookies

Okay! I don't care what you say... Shortbread is hands-down the best Christmas Cookie! And I think that you'll agree after trying these... because they melt in your mouth like butter.


Gluten-Free Shortbread


Ingredients

  • 1/2 cup butter

  • 3 tbsp Stevia

  • 2 tsp Vanilla Extract

  • 3/4 cup Almond Flour

  • 1/2 cup Tapioca Flour

  • Pinch of Salt


Directions

  1. Preheat oven to 350.

  2. Whip butter, vanilla and stevia with a mixer on high speed for about 3 minutes.

  3. Add flours and salt. Best again for another 3 minutes.

  4. Scoop batter onto a parchment-lined cookie sheet.

  5. Bake until edges are golden brown, about 11 to 13 minutes.

  6. Let cool on pan.

  7. Enjoy!
