Creamy Spinach & Sun-Dried Tomato Chicken

THIS IS ONE OF MY FAVOURITE DISHES!! Annnd it's become a staple in our household. You will not regret trying it!



Creamy Spinach & Sun-Dried Tomato Chicken

Serves 4


Ingredients

  • 2 tbsp Coconut Oil

  • 1 lb Chicken Breast (sliced)

  • 8 cups Baby Spinach

  • 1 1/2 cups Organic Coconut Milk (full-fat)

  • 1/4 cup Sun-Dried Tomatoes (chopped)

  • 1 tbsp Dried Rosemary

  • Sea Salt & Black Pepper (to taste)


Directions

  1. Heat coconut oil in a large skillet over medium heat.

  2. Add in the chicken breast strips and cook until no longer pink. Then remove chicken from the pan and set aside on a small plate.

  3. Add the spinach to the pan along with the coconut milk. Stir until the spinach is wilted, then add the chicken strips back to the pan. Add the sun-dried tomatoes, dried rosemary, salt and pepper. Cover and let simmer for 5 to 7 minutes.

  4. Divide between plates and serve with cauliflower rice.

  5. Enjoy!
