The Ultimate Breakfast Skillet

Servings: 4

Total cooking time: 20 minutes


  • 1 tbsp coconut oil

  • 1 pound ground beef

  • 1 bell pepper, chopped

  • 1 cup spinach

  • 1 tomato, diced

  • 4 eggs

  • 1 tsp Italian seasoning

  • Sea salt (to taste)

  • Black pepper (to taste)


  1. Over medium heat, add coconut oil to a large skillet. Brown ground beef and add Italian seasoning.

  2. Add in chopped bell pepper. Continue to sauté for 2-3 minutes. Add tomatoes and spinach. Stir to mix well.

  3. Use a spoon to create pockets for the eggs and crack an egg into each pocket. Cover the skillet with a lid and let the eggs cook until done to your liking (3-5 minutes).

  4. Divide onto plates and season with sea salt and black pepper to taste. Enjoy!
